About the Recipe

Ingredients

1 large ripe avocado, peeled and de-stoned.

1 clove of garlic, crushed (optional)

3 spring onions, finely sliced

4 cherry tomatoes, finely chopped

Juice of half a lime

Handful of fresh coriander, chopped

Preparation

  1. Mash the avocado flesh in a bowl using a fork until fairly smooth.

  2. Add the remaining ingredients and mix well. Add more lime juice if preferred.

  3. Enjoy!
