Vibrant Beetroot Hummus

About the Recipe


2 large or 3 medium beetroots, peeled and cubed

1tbs light olive oil

1 clove garlic

1 tin chickpeas, including the liquid

3 tbs extra virgin olive oil

1tsp ground cumin

½ tsp ground turmeric

1 tsp ground coriander

Pinch of sea salt



Preheat the oven to 180°C/gas 6. Place the beetroot in a roasting dish and coat in the light olive oil. Roast for about 40 minutes, until tender. The time will depend on the size of the beetroot chunks.

Put the beetroot and remaining ingredients in a blender and whiz until smooth, adding a few tablespoons of water to thin to the required consistency. Altenatively, transfer all of the ingredients to a jug and blend with a stick blender.

Store in glass jars in the fridge for up to 4 days.
